This week, I want to celebrate an act of self care that feels extra nourishing to me: cooking a new meal for myself 🥘

Cooking in my house generally consists of quick meals, following a pretty usual schedule for routine, timeliness, and a semi-picky eating child. We do veer off, but usually only one of us (me) digs the experimentation 🫣

So this week, on a night where my daughter wasn’t home, I let myself get inspired by some garden fresh yellow squash and eggplant that a friend gave me, and I loooooove me some garden fresh veggies 🫑

The result: my first pot-style ratatouille.

And it. was. soooo. fucking. good.

Worth it.

Highly recommend.

Not only did I venture out on a limb, I also customized the dish to my specific luteal cravings. I listened to what my body wanted and found a way to incorporate what I had on hand. And that’s a mega sweet combo of awesome (particularly if you’re on a budget 💲).

I can’t tell you the last time I had a meal that satisfied me so fully. We’re talking absolutely soul nourishing, core of my existence got fed, I wanted to bask in the glow of it satisfied.

I cared of myself in this fundamental way that I don’t often do. I usually eat to get by, you know? My daughter is the main focus of my meal planning. But this put me at the forefront of a loving act and I felt that love infused in my food.
